Direct Sowing: For direct sowing, plant ‘Chioggia’ beet seeds outdoors as soon as the soil can be worked in spring, when soil temperatures reach at least 50°F. Sow seeds about 1 inch deep and 1-2 inches apart in rows spaced 12-18 inches apart. The seeds typically germinate within 7-14 days. Beets prefer well-drained, fertile soil and consistent moisture, so regular watering is essential. Thin the seedlings to about 3-4 inches apart once they are established to allow room for growth. Expect to harvest in about 55-60 days.

Early Sowing for Seedlings: For an early start, sow ‘Chioggia’ seeds indoors 4-6 weeks before the last expected frost. Plant seeds 1 inch deep in seed trays filled with quality potting mix, maintaining a temperature of 70°F – 75°F for optimal germination. Once seedlings have a few true leaves and the risk of frost has passed, transplant them outdoors, spacing them 3-4 inches apart in rows.
