Pepper – ‘Hot – Big Jim’

  • Growing Temp 70°F – 90°F
  • Days to Maturity 75-80 days

Ease of Cultivation and robust flavor: Big Jim peppers are renowned for their large size and rich flavor, making them a favorite among chili enthusiasts. This variety is relatively easy to grow, making it suitable for both novice and experienced gardeners. Big Jim peppers thrive in warm weather and can be used in a variety of dishes, including salsas, stuffed peppers, and grilled preparations, adding a mild to medium heat level.

Direct Sowing: For direct sowing, plant seeds outdoors after the last frost date when the soil temperature is at least 70°F. Sow the seeds 1/4 inch deep and 18-24 inches apart in rows spaced 30-36 inches apart. Germination typically occurs within 14-21 days. Maintain consistent soil moisture and use mulch to help retain moisture and control weeds. Providing support for the plants may be beneficial as the heavy fruit matures.

Early Sowing for Seedlings: To start early, sow seeds indoors 8-10 weeks before the last expected frost. Use seedling trays filled with quality potting mix, placing 2-3 seeds per cell. Keep the temperature between 70-80°F for optimal germination. Once the seedlings develop their first true leaves and the danger of frost has passed, transplant them into the garden, spacing them 18-24 inches apart. Water thoroughly after transplanting and apply mulch around the plants to retain moisture.

Harvesting: To know when Big Jim peppers are ready for harvest, look for large, firm peppers that are typically 8-10 inches long. They can be harvested green or left to mature to a bright red color for a sweeter flavor. Harvesting usually occurs around 75-80 days after planting. Use scissors or garden shears to cut the peppers from the plant, taking care not to damage the branches.
