Elegant, mild, and easy to grow: Casper White Eggplant is a unique variety known for its creamy white skin and delicate flavor. It is a versatile vegetable that thrives in warm temperatures and is ideal for home gardens. This eggplant can be used in a variety of dishes, including grilling, stir-fries, and casseroles, adding a mild, tender texture and subtle taste.

Direct Sowing: Sow seeds directly in the garden after the last frost, when the soil temperature is consistently above 65°F. Plant seeds 1/4 inch deep and space them 18–24 inches apart in rows 30–36 inches apart. Keep the soil moist during germination, which usually takes 7–14 days. Once seedlings emerge, thin them to allow for proper airflow, and mulch around the plants to help retain moisture and prevent weeds.

Early Sowing for Seedlings: For an early start, sow seeds indoors 8–10 weeks before the last expected frost. Use seed trays filled with a well-draining potting mix and plant seeds 1/4 inch deep. Maintain a temperature of 70–75°F for optimal germination. Once seedlings have at least two sets of true leaves, harden them off before transplanting outdoors. Space transplants 18–24 inches apart in a sunny, well-drained location. Water regularly but avoid waterlogging.

Harvesting: Casper White Eggplants should be harvested when they reach 5–7 inches in length and the skin is smooth and glossy. The fruit should be firm to the touch, and the flesh should be tender and not overly soft. Overripe eggplants can become bitter, so its important to harvest them when they are young and at their peak flavor. Cut the fruit from the plant with a sharp knife, leaving a short portion of stem attached.
