Garlic chives can be used in a variety of dishes, including salads, soups, and stir-fries, and they also make a delightful garnish for many meals.

Direct Sowing: For direct sowing, plant garlic chive seeds outdoors in early spring, after the last frost, or in late summer for a fall crop. Sow seeds about ¼ inch deep and 12-18 inches apart in rows spaced 18-24 inches apart. Germination typically occurs within 14-21 days, depending on soil temperature. Garlic chives prefer well-drained soil rich in organic matter, so it’s beneficial to amend the soil with compost before planting. Once seedlings are a few inches tall, thin them to ensure adequate spacing for healthy growth. Expect to harvest in about 60-90 days.

Early Sowing for Seedlings: To get an earlier start, sow garlic chive seeds indoors 8-10 weeks before the last expected frost. Plant seeds ¼ inch deep in seed trays filled with quality potting mix, maintaining a temperature of 70°F for optimal germination. Once seedlings develop a few true leaves and the danger of frost has passed, transplant them outdoors, spacing them 12-18 inches apart in rows. Water well after transplanting to help establish the plants.

Harvesting: Garlic chives are ready to harvest when the leaves are at least 6 inches tall, typically around 60-90 days after sowing. To check for readiness, simply look for well-developed leaves that are vibrant green. Use scissors to snip the leaves at the base, taking care not to damage the plant. Regular harvesting encourages new growth, allowing you to enjoy fresh chives throughout the growing season.
