Chives are often used as a fresh garnish in salads, soups, and baked dishes, adding a subtle onion flavor without the pungency of larger onions.

Direct Sowing: For direct sowing, plant chive seeds outdoors in early spring after the last expected frost when soil temperatures are consistently above 60°F. Sow the seeds about ¼ inch deep and spaced 12 inches apart in rows that are 18–24 inches apart. Germination usually occurs within 7–14 days. Keep the soil consistently moist but well-drained to encourage healthy growth. Thin the seedlings to about 12 inches apart for optimal development.

Early Sowing for Seedlings: To start early, sow chive seeds indoors 6–8 weeks before the last expected frost. Use seedling trays filled with quality potting mix, placing 2-3 seeds per cell. Maintain a temperature of 70°F to promote germination. Once the seedlings have developed their first true leaves and the danger of frost has passed, transplant them into the garden. Space the transplants about 12 inches apart in rows that are 18–24 inches apart. Water them well after planting and consider using mulch to help retain moisture.

Harvesting: To determine when chives are ready for harvest, look for tall, vibrant green stalks, typically ready within 60-90 days after sowing. You can begin harvesting the leaves once they are 6–8 inches tall, snipping them off at the base. Regular harvesting encourages new growth, and chives can be harvested throughout the growing season. They are best used fresh, but can also be dried for later use.
