Direct Sowing: For direct sowing, plant caraway seeds outdoors in early spring after the last expected frost when soil temperatures are around 55°F. Sow the seeds about ¼ inch deep and spaced 12 inches apart in rows that are 18–24 inches apart. Germination typically occurs within 10–20 days. Keep the soil consistently moist, but avoid overwatering, as caraway prefers well-drained conditions. Thin the seedlings to allow adequate space for growth.

Early Sowing for Seedlings: To start early, sow caraway seeds indoors 6–8 weeks before the last expected frost. Use seedling trays filled with quality potting mix, placing 2-3 seeds per cell. You can also harvest the young leaves earlier for culinary use. For seed harvesting, cut the flower heads when the seeds are mature and brown, then dry them in a cool, dark place. Store the seeds in a cool, dry location to maintain their flavor and potency.
